All recipes are for 2 servings unless noted. Oil is canola oil and salt is kosher salt.

Daikon no misoni / daikon radish in miso-flavored broth

Mild miso flavor is soothing on chilly days.


<Ingredients>
10 cm daikon radish
1 red chili pepper (sliced)
200 cc dashi
1 tbsp miso
2 tbsp sake
1 tbsp mirin
1 tsp sesame oil


<Directions>
1.

Diagonally cut daikon.

Mix miso, sake and mirin, and set aside

In a pot, heat sesame oil, and saute daikon and red chili pepper on medium high heat.

When all daikon surfaces are coated with oil, pour dashi, and simmer on medium low heat until tender.


5.

Add miso mixture, and cook for a few minutes.


<Notes>
  • This is quite soupy. If less liquid is desired, boil down dashi in Process 4 and add less miso mixture in Process 5.
  • The amount of miso should be adjusted according to saltiness of miso.
